中文摘要 | 本研究探討薏苡籽實,以帶殼狀態和脫殼後的糙薏仁貯存於常溫 (約25℃)、15℃ 及 5 ℃之下, 每三個月或六個月定期取樣分析貯藏期間薏苡籽實中薏仁油的薏仁酯含量、 脂肪酸組成、酸價和過氧化價之變化,以期找尋薏苡籽實的較適貯存條件。結果發現以常溫 貯存的帶殼籽實與脫殼糙薏仁經六個月貯存後均已長蟲嚴重,酸價及過氧化價也明顯上升。 以複因子試驗得知原料中以帶殼籽實於低溫貯存時,薏仁油的酸價及過氧化價均較低;薏仁 酯含量,隨著貯存期間的增加而遞減,特別是常溫組,減少最快。以 15 ℃貯存的原料,其 薏仁油的脂肪酸組成、酸價和過氧化價均與 5 ℃貯存者相近, 因此在節省能源的考量下, 最合適的貯存條件是將帶殼籽實貯存於 15 ℃。 |
英文摘要 | Whole grain adlay and dehulled kernels were used as raw materials to study the optimum storage condition Changes of the coixenolide content, fatty acid composition, acid value and peroxide value fo the oil in adlay seed were analyzed every three or six months when they were stored at room temperature (∼ 25 ℃ ), 15 ℃ and 5 ℃. The results showed that insects grew severely in the materials stored at room temperature after six months, and that the acid and peroxide values of the oil increased significantly. According to results of the factorial experimental design, the acid and peroside values of the oil obtained from the whole grain adlay stored at low temperature were much lower and the coixenolide content decreased with increasing storage time, especially at roome temperature. The fatty acid composition, acid and peroxide values of the oil obtained from the material stored at 15 ℃ were very similar to those of the material stored at 5 ℃; therefore, the most suitable storage condition considering energy savings was to store the whole grain adlay at 15 ℃. |
