中文摘要 | 本研究主要目的是以薏苡麩皮為原料探討較適的萃油溶劑和萃油條件,並比較籽實各部位(包括整粒薏苡籽實、薏苡殼、薏苡種皮、糙薏仁、薏苡麩皮和精白薏仁六部分)中一般組成分,以及薏仁酯和膳食纖維等之含量與各部位丙酮萃取物之抗致突變效果。薏苡麩皮以乙醚、丙酮和正己烷等三種溶劑萃取粗油和薏仁酯量的結果發現,以丙酮萃取18小時萃得之精油總量以及薏仁酯含量均最高。粗蛋白含量最高的部位為精白薏仁(21.9%),粗脂肪含量以麩皮(14.4%)最高,灰分從籽實外層往內依次遞減,而碳水化合物則以薏苡麩皮最低。薏仁酯含量以麩皮最高為47.mg/kg。膳食纖維以薏苡種皮中含量最高(63.2%),糙薏仁中之不溶性膳食纖維及可溶性膳食纖維均比精白薏仁為高,故以糙薏仁進食最具保健效果。各材料之丙酮萃取物對B(a)P、IQ和NQNO均具抗致突變作用,尤其以麩皮及種皮之粗油最顯著(P<0.05),各萃取物對Salmonella typhimurium TA98均無毒性或致突變性。 |
英文摘要 | The purpose of this study was to find the optimal solvent and extraction conditions for adlay bran, and to compare the proximate composition, coixenolide and dietary fiber contents, and antimutagenicity of the six fractions, including whole grain adlay, adlay hull, adlay testa, dehulled adlay, adlay bran, and polished adlay. When ether, acetone and n-hexane were used as solvent for extraction oil and coixenolide from adlay bran, it was found that extraction for 18 hours using acetone could yield the highest amounts of oil and coixenolide. Among the six fractions, polished adlay contained the highest amount of crude protein (21.9%); adlay bran contained the highest amount of crude fat (24.4%) and coixenolide (473ppm) contents; the ash content gradually decreased from the external to the internal portion. Adlay testa contained the highest amount of dietary fiber (63.2%). All the acetone extracts had significant antimutagenic effects toward B(a)P, IQ and NQNO (P<0.05); adlay bran had the greatest effect. None of the tested extracts had mutagenicity or toxicity toward Salmonella typhimurium TA 98. |
