中文摘要 | 危害分析重要管制點(Hazaxd Analysis Critical Control Pomt,HACCP)制度是建立在良好作業規範及衛生標準操作程序工作上,落實了此先決條件工作後,HACCP制度較能集中在加工製程中危害控制。本研究在熟食食物接觸表面,應用 ATP 冷光反應技術作線上監測,評估這些表面的清潔度,顯示採用不�袗�製容器經清洗消毒後,烘乾使用則熟食食物接觸表面的衛生較易維持(n=20)。配膳區高效率清淨空氣(High EfficJency Particulate Air)過濾網維護及使用,讓空氣微生物品質維持在 2.12±0.15log CFU/m3。雖然清潔的設備及乾淨的環境是製造安全食物的必需條件,但人員操作及健康管理,廠房的設計,蟲鼠害的管制及倉儲管理也是一樣的必備條件。本研究對象(餐盒工廠)能控制蔬菜半成品的生菌數量,再加上配膳的乾淨環境及食物接觸表面清潔,就能控制成品的生菌數含量偶爾偏高的問題。另做好各加熱步驟的食物中心溫度達控制界限的要求,烹調及配膳時防止二次污染,人員正確操作,容器、砧板切忌生、熟食污染,應能避免食物中毒發生機會。 |
英文摘要 | Hazard Analysis Critical Control Point (HACCP) system is built upon a firm foundation of compliance with Good Manufacturing Practice and acceptable sanitation standard operating procedures. When sanitation standard operating procedures are in place, HACCP can be more effective because it can concentrate on the hazards associated with the food or processing and not on the processing plant environment. ATP bioluminescence technique was applied to evaluate the cleanliness of food contact surfaces. It was found that stainless steel made food contact surface had very good cleanliness, especially dried one. The effect of maintenance and correct use of high efficiency particulate air filter on microbial quality of air was kept at 2.12 ±0.15 log CFU/m3 in packaging area. Although clean equipment and working area are essential for producing safe foods, so are personnel practices, equipment and operation design, plant facilities, pest control, and warehouse practices. In this study, a higher total plate count of lunch boxes can be solved by bleaching individual vegetable item correctly and keeping food contact surfaces and working area in good sanitation. Besides, each critical control point such as cooking step、personnel practice during allocation、post contamination from raw material should meet its critical limit consistently. Then, the boxed lunch food poison event can be avoided. |
