中文摘要 | 為了進一步瞭解市售魚油之型態及其品質,隨機抽取22件商品進行標示調查、組成分分析、脂肪酸組成分析並依中國國家標準測定其酸價及過氧化價,結果如下: 所有樣品皆標示品名、成分、製造日期、保存期限、廠商地址、電話及每瓶售價;其DHA、EPA含量分別為9-37%、6-24%;酸價約0.17~8.60mgKOH/goil、過氧化價約7.23~49.73meq/kgoil;22件市售魚油檢體經保麗龍容器溶解試驗有兩種不同現象,其中6件可溶解保麗龍容器,經TLC-FID鑑定,結果發現可溶解保麗龍容器之魚油產品均為脂肪酸乙酯類,對保麗龍容器不溶解者均為三酸甘油酯類,進一步以GC確認,亦證明可溶解保麗龍容器之市售魚油均屬脂肪酸乙酯類產品。 |
英文摘要 | In order to understand the physical chemical structures and qualities of current commercial fish oil products, twenty two samples were purchased from supermarket for investigation. The results were as follows: All the products indicated the brand names, ingredients, DHA and EPA contents, packaging date, expiratione date, address and telephone number of the manufacturer, and price of each pack. DHA and EPA contents were in the range of 9-37% and 6-24%, respectively. The acid values were about 0.17~8.6mg KOH/g oil. The peroxide values were about 7.23~49.73meq/kg oil. Among the twenty two samples, six products could dissolve the polystyrene containers. TLC-FID analyses revealed that these six products were in the forms of ethyl fatty acid esters instead of natural triglyceride form, which can not dissolve polystyrene containers. The six fish oil products had also been further identified ethyl fatty acid esters by the direct GC analyses. |
