英文摘要 | Highly nutrient value of dark green leafy sweet potato is considered the healthy vegetables. It can grow rapidly to cultivate all the year round in Taiwan. Two cultivars (Taoyung 2 and Ong tsai) were used to investigate the variation of eating quality in different seasonal and diural harvesting times. It indicated that the sweet potato leaf tips in spring and summer seasons had higher fresh weight, dry weight, soluble sugar content, vitamin C content and nitrate content than the fall and winter seasons. High value of starch content, soluble protein content and oxalic acid content were appeared in winter season. The neutral detergent fiber content was low in spring season, whereas the acid detergent fiber content was similar in different seasons. However, the harvesting seasons and diural harvesting times of leafy sweet potato would influence the components of eating quality inconsistently which might cause by the change of temperature and daylingt. |
