中文摘要 | 本研究探討液體培養所得洋菇菌絲體之品質並與洋菇子實體相比較。在一般成分 包括灰分、粗脂實、粗纖維和粗蛋白之含量上,菌絲體皆低於子實體;僅在總糖含量上,菌 絲體高於子實體。在可溶性糖類中,菌絲體含高量之葡萄糖和繭蜜糖,但子實體則含高量之 甘露糖醇。 在胺基酸組成上,二者都以麩胺酸含量最多,而總含量並無顯著之差異。 在 8 種有顯著差異之胺基酸中,只有在丙胺酸和離胺酸之含量上,菌絲體低於子實體。在脂肪酸 組成上,二者都以亞麻油酸之百分組成最高,但菌絲體低於子實體。 而菌絲體則有 6 種脂 肪酸之百分組成高於子實體。在核甘酸之組成上,菌絲體之個別核��酸含量和總含量皆低於 子實體。若能適度調整培養組成,則可改善菌絲體之一般成分比例,使其更接 近於子實體,以便作為食品或調味料之用。 |
英文摘要 | The object of this study was to evaluate the quality of Agaricus bispor us mycelia obtained from liquid culture as compared with fruiting bodies. In the proximate composition, including ash, crude fat, crude fiber and crude protein, the contents of mycelia were lower than those of fruiting bodies. Only the content of total carbohydrate in mycelia was higher than that in fruiting bodies. In the soluble sugars, mycelia contained high amount of glucose and trehalose, while fruiting bodies contained high aount of mannitol. In the amino acid copmosition, the glutamic acid was the major amino acid for both fruiting bodies and mycelia, and the total content was similar. Among the 8 amino acids that were significantly different, the contents of alanine and lysine in the mycelia were higher than those in fruiting bodies. In the composition of fatty acids, linoleic acid had the highest persentage in both fruiting bodies and mycelia while the percentage in cycelia was lower than that in fruiting bodies. However, the percentages of 6 fatty acids in mycelia were higher than those in fruiting bodies. In the composition of 5'-nucleotides, each individual and total content of 5'-nucleotides in mycelia were lower than those in fruiting bodies. The quality of mushroom mycelia can be improved using appropriate medium to be similar to that of fruiting bodies in order to be used as food or flavoring agent. |
