英文摘要 | Rice flour can replace wheat flour to increase the utilization of rice and 10 to improve rice processing diversification. The objective of this study was 11 the application of radio frequency (RF) heating for disinfestation and 12 pasteurization of rice flour to enhance the level of hygiene and safety of rice 13 flour. The results showed that the RF output power was influenced by RF 14 electrode gap and weight. The smaller RF electrode gap and larger rice flour 15 loading had higher RF power output. The temperature of rice flour increased 16 with increasing RF heating time. The temperatures of rice flour for 17 disinfestation and pasteurization must be about 60 ℃ and 100 ℃ , 18 respectively. 4.5 kg indica and japonica rice flours placed in RF with 16 cm 19 electrode gap required 120 s and 300 s to obtain 100% mortality of 20 Sitophilus oryzae and 100% lethality, respectively; there was no significant 21 difference on the appearance of rice flour. |
