英文摘要 | The moisture content in Argentina squid (Illex argentinus) meat decreased from 74.6% to 16.6% during drying. The water activity in the final product was 0.61. the crude protein, crude fat, and ash showed a small change on a dry weight basis. A marked increase in the Hunter "b" value together with a reduction of the reducing sugar to less than half was observed during processing. This implied that a nonenzymic browning reaction might have occurred. The pH value showed no apparent change, but volatile basic nitrogen increased considerably. However, the ammonia content decreased. High level of trimethylamine oxide (TMAO; 743.5μmole/g dry basis) and small amounts of trimethylamine, dimethylamine, and formaldehyde were detected in the raw material. TMAO decreased by about 40% after processing while the other three components changed only slightly. The raw material contained 5411 mg/100 g dry basis of free amino acids (FAA), of which proline and taurine were the major acids. The FAA increased considerably after drying, especially glutamic acid and alanine increased even more significantly. The level of adenosine triphosphate (ATP) and related compounds (ARC) was 31.2μmole/g dry basis in the raw material. Hypozanthine was the predominant component. The changes in ARC were not significant during processing. |
