中文摘要 | 虱目魚的總嘌呤量介於 48.13-54.17 μ mole/g dry wt.,魚體個別差異甚大, 各別嘌呤中以次黃嘌呤( Hyp )的含量最高,佔 80% 以上,不同部位的嘌呤含量並無顯著 的差異( p>0.05 )。 然而,比較不同部位間的游離嘌呤含量,發現肌��酸( IMP )含量 以後背部及中腹部為最高, 肌��( Ino )亦以後背部含最高量, 中背部則有較高含量的 Hyp,應係不同部位魚肉所含的酵素種類或活性大小不同所致。 各部位的游離嘌呤含量皆以 IMP 為最多,其次為 Ino 的含量,Hyp 則又次之,顯示虱目魚死後腺��三磷酸( ATP )降 解過程中主要蓄積產物為 IMP 和 Ino。 觀察不同虱目魚魚體大小與嘌呤相關物質的關係, 發現腺嘌呤( Ade )及鳥糞嘌呤( Gua )的含量和魚體體重、體長及肥滿度間呈顯著的負 相關,亦即體重愈重、體長愈長及肥滿度愈大者可能其 Ade 和 Gua 的含量愈少;相反地, Hyp 的含量(μ mole/g protein )則呈顯著正相關, 唯游離嘌呤含量中的 Hyp 又與體重 和體長有顯著的負相關性,可能不同大小魚體的酵素活性各有不同,尤其是 AMP deaminase 和 nucleosidase 的不同活性大小可能具有重要的影響。 |
英文摘要 | The purpose of this study was to investigate purine content in different muscle of milkfish (Chanos chanos), the relationship between purine content and body size was also evaluated. Results indicated that total purine content of milkfish ranged from 48.13 to 54.17 μ mole/g dry wt. Around 80% of total purine was hypoxanthine (Hyp), the dominant of four purine bases (Ade, Gua, Xan and Hyp). The purine content were not significantly different between the different muscle of milkfish. However, the highest amount of free IMP and Ino were found in posterior part of dorsal muscle, whereas the free Hyp dominated in central part of dorsal muscle. This implied that the spices and activities of enzyme in varied muscle might be different. Milkfish contained high level of free IMP and Ino. Thus, it was proposed that the IMP and Ino were the major accumulation products as ATP degraded. Evaluating the relationship between purine substances and the body size of milkfish, a negative regression of Ade and Gua was observed. However, there were positive regression between Hyp (μ mole/g protein) and body weight as well as Hyp and body length. Furthermore, a negative regression between free Hyp and body size was also found. These might due to the different activities of enzyme, such as AMP deaminase or nucleosidase, in different body size of milkfish. |
