| 中文摘要 | 肉豬屠體重與屠體長是豬種改良的重要經濟性狀。屠體重為經放血和清除內臟及生殖器後的重量,即含頭、皮、腳、尾、板油之溫屠體重,為目前國內屠體評價使用之交易重。屠體長為第一助骨前緣至恥骨前端的距離,是背最長肌的間接指標。本試驗於1993年8月至1995年6月期間,分別於桃園、彰化、臺南和屏東地區加工廠採樣,計測量8841頭肉豬之屠體重和屠體長。屠體重平均分別為91、93、88和86kg,屠體長平均分別為83、84、82和82cm。中北部肉豬屠體較南部肉豬屠體為重(P<0.05)。屠體長介於81至86cm者,有6120頭,約佔69.2%;而屠體長介於75至92cm者,則有8801頭約佔99.5%。當屠體長介於81至86cm時,其和屠體重之表型相關為0.26(P<0.0001),暗示臺灣肉?整齊度需加以評估。若將屠體依屠體長分類為81~82、83~84與85~86cm各組時,以其最輕屠體重和最重屠體重之差距值除以該類組平均屠體重為差距率時,則以100%和前述差距率相減值來表示整齊度,結果發現臺灣肉豬屠體整齊度僅為73.2±2.9%,顯示本省肉豬屠體性狀尚待改良。 |
| 英文摘要 | Carcass weight and length are economically important traits for genetic improvement of pig. Carcass weight is the weight after blood, internal organs and reproductive tracts are removed. In the carcass pricing system in Taiwan, a carcass contains the head, skin, feet, tail and leaf fat. Carcass length is the length from the fore edge of the first rib to the foretip of the public bone. The carcass length serves as an indirect index for maximal length of Longissimus dorsi. A total of 8,841 hogs slaughtered at Taoyuan, Changhua, Tainan, and Pingtung regions with measurements of carcass weights and carcass lengths were sampled at random between August of 1993 and June of 1995. Mean weights of the hog carcasses at Taoyuan, Changhua, Tainan or Pingtung regions were 91, 93, 88 and 86 kg, respectively along with 83, 84, 82 and 82 cm of carcass lengths. Hogs slaughtered at Taoyuan and Changhua regions were heavier (P<0.05) than those slaughtered at Tainan and Pingtung regions. There were 6,120 hog with carcass lengths between 81 and 86 cm, which accounted for 69.2% of the records collected. However, there were 8,801 hogs with carcass lengths between 75 and 92 cm which accounted for 99.5% of data used in the study. The phenotypic correlation coefficient between carcass weights and carcass lengths was 0.26 (P<0.0001) for carcass lengths between 81 and 86 cm. It indicated that the evaluation of carcass uniformity for Taiwan hogs should be done as soon as possible. Within a given carcass length group, the range of carcass weights divided by the mean of carcass weights for the corresponding carcass lengths group was used to present the percentage of difference. The uniformity of hog carcasses was then evaluated by the percentage of 100 minus the percentage of difference described above. Carcass uniformity of Taiwan hogs was only 73.2±2.9% which necessitates the improvement of carcass traits in pig production in the future. |
