中文摘要 | 本研究由 8 株東方發酵食品用黴菌,包括豆腐乳釀造、天貝製造、米製酒類釀造 用等菌株中, 篩選出豆腐乳釀造菌株 Actinomucor elegans CCRC 31342。 將此菌株以 2% 脫脂黃豆粉等培養基, 於 25 ℃、120rpm 進行液體振盪培養,能產生具抑菌活性之化合物 , 對 Bacillus cereus CCRC 10603、B. cereus CCRC 10250、B. subtilis CCRC 10258、 B.subtilis CCRC10267、Listeria monocytogenes USDA scott A、Staphylococcus aureus CCRC 12657、 Staph. aureus CCRC 12653、 Streptococcus feacalis CCRC 10066、 Serratia marcescens CCRC 10768 等 9 菌株具抑菌活性,除 B.subtilis 外均為病原菌。 在此 9 菌株中, 對 Staph. aureus CCRC 12657 及 B. subtilis CCRC 10258 具最有低抑 制濃度( 3% )。添加 3% 抑菌物質至 TSB 培養基中,可延遲 Staph. aureus CCRC 12657 生長遲滯期 10h 以上。 Act. elegans CCRC 31342 抑菌物質為對熱敏感之化合物,於 100 ℃處理 2 小時抑菌活性幾降為零。在 pH 5 ∼ 7 間抑菌活性相當穩定,6h 內維持 Staph. aureus CCRC 12657 菌落數在 10 �� CFU/mL 左右。 |
英文摘要 | In this study, Actinomucor elegans CCRC 31342 was selected from 8 molds used in oriental food fermentation for the production of antimicrobial substances. The selected mold was subjected to submerged culture in a medium containing 2% defatted soybean meal at 25 ℃ for 72h with 120 rpm shaking. The broth showed antimicrobial activity for Bacillus cereus CCRC 10603, B. cereus CCRC 10250, B. subtilis CCRC 10258, B. subtilis CCRC 10267, Listeria monocytogenes USDA scott A, Staphylococcus aureus CCRC 12657, Staph. aureus CCRC 12653, Strepto coccus feacalis CCRC 10066 and Serratia marcescens CCRC 10768. All of nine bacteria were pathogens except B. subtilis. Among these bacteria, Staph. aureus CCRC 12657 and B. subtilis CCRC 10258 showed the lowest minimun inhibitory concentration (3%). Lag phase growth of Staph. aureus CCRC 12657 was prolonged for at least 10h when 3% of the antimicrobial substances were included in the TSB medium. When the antimicrobial substances were heated at 100 ℃ for 2h, the antimicrobial activity was almost diminished. The substances showed relatively stable antimicrobial activities at pH 5 to 7, at this condition the number of colony of Staph. aureus CCRC 12657 mantained at 10 �� CFU/mL for 6h. |
