中文摘要 | 本實驗係採用 1996 年第二期作之四種臺灣省產及二種日本引進之梗糯品種稻米 為試驗材料,分析六種梗糯品種稻米澱粉之直鏈澱粉含量、膨潤力、溶解度、連續楜化黏度 、熱焓糊化行為及澱粉微細結構,探討不同梗糯品種間理化性質之相關性及差異性。由實驗 結果顯示,六品種之直鏈澱粉含量皆低於 5%,四種省產糯米中以臺梗糯 1 號之膨潤力及溶 解度較高, 糊化起始溫度( To )、吸熱焓值(△ H )及連續糊化黏度較低,其它品種差 異較小,二試驗區皆然。日本引進之品種具有較低之膨潤力和較高的連續糊化黏度,且其回 昇黏度值較小,顯示其澱粉糊液在冷卻過程中有較高之穩定性,不易發生回凝。四種省產糯 米之微細結構並無顯著之差異,但兩日本品種有較高之藍價,顯示其支鏈澱粉中之外鏈較長 與碘之結合力較強,這也是導致其理化性質與省產品種不同之因素之一。 |
英文摘要 | Six waxy rice cultivars, 4 native and 2 brought in from Japan, were grown at the Taichung Agricutural Experimental Station during the second crop season in 1996 and used as test samples. The physicochemical properties, which included the amylose content, swelling power, solubility, viscoamylograph, gelatinization properties and the starch fine structure, were examined. The results showed that all samples had amylose content below 5%. Concrning the physicochemical properties, there were some significant differences among the 4 native rice crops and there was a significant difference between the native and the 2 foreign cultivars (p<0.05). The native waxy rice variety, TKW 1, had the highest swelling power and solubility, and the lowest onset temperature (To), enthalpy (△ H), pasting temperature and peak viscosity compared to the others. Two rice varieties brough in from Japan, Chukoku 130 and Odome, had lower swelling power and higher pasting viscosity compared to the native rice varieties. A low setback viscosity indicated that these two varieties had high starch gelatinized stability, which was apt to retard retrogradion. In the mean time, Chukoku 130 had a high blue value, which meant that its amylopectin had a long external chain length, and resulted in differences in the physicochemical properties. |
