| 中文摘要 | 調查目前市面上所販售的九種金針乾製品,其水分含量和二氧化硫分別為 5.92- 20.14 %及 284.9-13981.5 ppm, 絕大部分二氧化硫含量超過衛生署規定 500 ppm 的範圍 , 有礙健康。 依二氧人硫殘留量高低, 將九種乾製金針區分為 >10000ppm、 1500 - 10000ppm 和 <1500ppm 三種高、中、低殘留群,利用 25、80 及 100 ℃之浸水的過程中, 金針吸水後的含水率與二氧化硫殘留量的相關係數為 0.81- 0.88 之間,而隨浸水時間延長 的物性測定結果,切斷力增加,L 值的改變無一定規律,a值及b值則有下降趨勢。除浸水 方式外,長時間儲放也降低二氧化硫的殘留,室溫下儲放六個月約減少乾製金針二氧化硫一 半的殘留量。 |
| 英文摘要 | Moisture content and sulfur dioxide residue of nine dried Day-lily selected from market were 5.92-20.14% and 284.9-13981.5 ppm, respectively, The most of dried Day-lily contained much sulfur dioxide residue more than 500 ppm. According to the sulfur dioxide residue, the dired Day-lily were calssified into three groups, namely high (>10000ppm), middle (1500-10000ppm) and low (<1500ppm) sulfur dioxide residue Day-lily. The sulfur doxide residue of millde and low residue Dayi-lily could be reduced to below 500ppm by soaking at 25 ℃,80 ℃ or 100 ℃ for 30 min, while the high residue Day-lily still had sulfur dioxide residue in excess of 500 ppm under the same treamtments. The coefficient between moisture content and sulfur dioxide residue of rehydrated Day-lily were 0.81-0.88. The increase of breaking force and the decrease of a and b value were observed during soaking. The change of L value was not remarkable. Not only soaking, but also the long term storage could reduce the sulfur dioxide residue of Day-lily. The decreasing level of sulfur dioxide residue was about 50 % at room temperature storage for 6 months. |
