中文摘要 | 本研究的目的是探討金針製品在熱水浸泡過程中之二氧化硫殘留量及色澤的變化 情形。 測定 5 種市售包裝金針乾製品, 其 pH 值、 水分含量和二氧化硫含量分別為 4.15-5.33、20.93-22.92% 及 9466-26645 ppm。 全部金針樣品之水分含量均高於中國國家 標準限值( 10% ),而二氧化硫殘留量則遠超過行政院衛生署公佈之安全容許量的 500ppm 。將金針以 1:10、1:15 及 1:20 三種不同的浸水比例進行高溫浸泡實驗,當浸水 10 分鐘 時,金針殘留的二氧化硫測定值,依浸水比例分別減為原含量的 40%、33% 及 26%,而浸泡 30 分鐘則變為 31%、25% 及 20%。 金針在浸水初期二氧化硫含量下降快速而後減緩,然而 浸漬水中二氧化硫含量則先快速增高,之後隨浸泡時間的延長,二氧化硫濃度增加並不顯著 ,甚至有些微降低的現象。 在色澤部分、以 2ab 值表示,L 表示明亮度,a 正值表示紅色 度(負值為綠色度),b 正值表示黃色度(負值為藍色度)。 金針樣品 L、a、b 值高,浸 泡前均呈現亮麗光澤的橘黃色外觀,浸泡後 L、a、b 的測值下降;而浸漬水中 L 值隨浸水 時間增加而減少,且可測出 a、b 值則顯示金針所含色素有溶出的現象。 |
英文摘要 | The objective of this study was to investigate the changes in sulfur dioxide content and color of rehydrated daylilies during water soaking treatment. Moisture contents, pH values, and residual sulfur dioxide of 5 dried daylilies purchased from local markets were 20.93-22.92%, 4.15-5.33, and 9,466-26, 645 ppm, respectively. The moisture content in all samples was higher than the limitation of Chinese National Standard, which is 10%. The residual sulfur dioxide of them were also much higher than the official guideline limitation (500 ppm). The sulfur dioxide contents of dried daylilies being soaked at 98 ℃ for 10 minutes in three different water ratios (1:10, 1:15, and 1:20) were reduced to 40%, 33%, and 26% of original values, respectively. Such contents could further be decreased to 31%, 25%, and 20% of original values, respectively, after 30 minutes of soaking. The residual sulfur dioxide of rehydrated daylilies was first quickly decreased and then declined slowly to the end. On the other hand, the sulfur dioxide content of soaking water was increased obviously at the beginning, but slightly change afterward. The appearances of all dried daylilies tested had good light orange color. The Lab values represent a color system, where L=Lightness, +a=redness, -a=greenness, +b=yellowness and -b=blueness. The L, a, and b values of daylily products decreased during soaking, which indicated that the pigments of daylilies were dissolved into the soaking water. |
