中文摘要 | 以 193 件市售龍眼蜜為試驗材料,並將龍眼蜜依來源分類為評鑑蜜、蜂農蜜及超 市蜜。 分別進行品質包括水分、 水活性、 可溶性固形物、 糖類、 酸度、 hydroxymethylfurfural ( HMF )、Hunter L,a,b 值及澱粉活性等分析。由糖類分析結果 , 37.14 %的超市蜜攙有蔗糖或麥芽糖, 並且由糖類、 澱粉�t活性值、Hunter L,a 值及 HMF 分析結果顯示,大都有攙入高果糖糖漿的疑慮。此三類蜂蜜除 Hunter a 值、果糖、蔗 糖及麥芽糖外,其餘各項成分皆有顯著差異。評鑑蜜、蜂農蜜及超市蜜合於甲級標準比例分 別為 82.5,43.6 及 5.7 %。 評鑑蜜品質最佳,蜂農蜜則應改善水分含量偏高的問題,而 超市蜜除酸度外,其餘檢測項目皆多數不合於甲級標準。 |
英文摘要 | One hundred and ninety three Longan honey samples collected from quality contests, beekeepers and supermarkets were used as experimental materials. Qualities which included moisture, water activity, soluble solids, sugars, acidity, hydroxymethyl-furfural (HMF), Hunter L,a,b values and diastase activity were analyzed. According to the results of the sugar analysis, 37.14% of Longan honey sold in supermarkets was adulterated with sucrose and maltose. In addition, adulteration with high-fructose corn syrup was suspected based on analysis results of sugars, diastase activity, Hunter L,a values and HMF. All the samples were significantly different in quality items except Hunter a value, fructose, sucrose and maltose. The percentage of honey samples from quality contests, beekeepers and supermarkets which attained grade A level were 82.5, 43.6 and 5.7%, respectively. The quality of honey from quality contests was the best while beekeeper honey had a high moisture content problem and the majority of supermarket honey did not reach grade A. |
