| 中文摘要 | 即食盒餐(便當)廣為一般消費者食用,因其不再加熱即直接食用,故衛生狀況頗為重要。生菌數及大腸桿菌?(coliforms)是常用的衛生指標菌,傳統方法檢測分別需要二天及二至四天時間。本研究以阻抗法(impedimetric method)檢測盒餐中之生菌數及大腸桿菌?,並與傳統方法比較,其相關係數分別為-0.86及-0.91。二類微生物之分析一般在8小時內可以完成,除了節省分析時間外,阻抗法還具有自動分析多數樣品之能力。此外,亦利用BIOLOG菌種鑑定系統(Biolog Inc., Hayward, CA, USA)進行盒餐中細菌分離株之鑑定,在已鑑定出的15株革蘭氏陽性菌中皆為Bacillus屬細菌,顯示此類細菌為盒餐中陽性菌之主要菌種。 |
| 英文摘要 | Chinese box lunches are popular in Taiwan. Since they are ready-to-eat, microbial contamination is a major concern. Aerobic plate counts and coliforms are generally used as indicators, and 2 and 2~4 days are required for determination, respectively. In this study, use of the impedimetric method to determine the aerobic plate count and coliforms in Chinese box lunches was evaluated. Based on the change of impedance in the incubation wells, correlations between the aerobic plate count and coliforms with impedance detection times were established by a Bactometer M-128 (Vitek Systems, Hazelwood, MD, USA). By relating the impedance detection times with the aerobic plate counts and coliforms in Chinese box lunches, two hyperbolic curves were obtained with correlation coefficients of -0.86 and -0.91, respectively. In addition, the BIOLOG bacteria identification system was used to identify bacteria isolated from Chinese box lunches. Among the 21 Gram-positive isolates, 15 were identified as Bacillus spp., which are probably the major contamination microorganisms in Chinese box lunches. |
