中文摘要 | 本研究進行139件市售中式香腸衛生條件(包括生菌數,金黃色 葡萄球菌,產氧莢膜桿菌),亞硝酸根含量及水分活性分析。結果顯示, 市售香腸每克樣品之生菌數介於8.2X10��-3.0X10�穩茪孜﹛A金黃色葡萄 球菌與產氧莢膜桿菌之污染率分別為15.8.亞硝酸根含量之不合格率為 13.8 。研究結果亦顯示,亞硝酸根(70ppm)之添加超出限制標準,並未 能有效的抑制金黃葡萄球菌或產氧莢膜桿菌之污染,其污染率分別為 58.8與17.6。中式香腸之水分活介於0.81與0.96之間,84.2香腸樣品之水 分活性高於0.91,結果亦顯示水分活性高之樣品,其衛生條件較差。 實驗結果亦顯示,真空包裝之產品,其衛生條件遠比市場肉攤或流動攤販出售者 為佳,其生菌數含量低,金黃色葡萄球菌與產養莢膜桿菌之污染率亦相當低,因 此建議消費大眾應盡量選購大工廠公司出品之真空包裝產品。 |
英文摘要 | One hundred and thirty-nine Chinese sausage samples were collected from manufactories and marketsfor the survey of hygienic quality (total aerobic count, Staphylococcus aureus and ClostricUum perfringeiis),concentration of nitrite and water activity. The results showed that the total aerobic count in the sausagesranged from 8.2x10�� to 3.0x10�� CFU/g , and the portion of tested samples contaminated by Staphylococcus aureusand Clostridiumperfringens were 56.8 and 15.8 , respectively. As for the concentration of nitrite, 13.8 were beyond the official limiting value(70ppm) , of which the rate of contamination by Stapbylococ cusaureuswd Clostndium perfnngens were 58.8 and 17.6 , respectively, suggesting that 70ppm nitritecan not effectively prevent the contamination of those two pathogenic organisms. The water activity ofthese tested samples was in the range between 0.81 and 0.96, of which 84.2 have water activity beyond0.91. The results also indicated that the hygienic quality was closely related to water activity. It was also found that the vaccum-packed Chinese sausages produced by well qualified manufactorieshad much better hygienic quality than those produced from traditional markets. Therefore, it is stronglyrecommended that consumers should try their best to buy Chinese sausages produced by well qualifiedmanufactories. |
