中文摘要 | 本研究在檢出、分離及鑑定存在於腐敗之金柑醃漬貯存液、市售蜜餞類及醃漬類 食品等不同供試試樣中之耐滲壓性腐敗酵母菌,所分離出 66 株酵母菌株,經進一步分類鑑 定後,其主要分屬於七個屬別,共 11 種不同酵母菌株。其中包括有 Candida rugosa 3 株 ; C. sake 2 株;C. tropicalis 16 株;Cryptococcus laurentii 1 株;Kluyveromyces marxianus 1 株; Pichia membranaefaciens 10 株; P. ohmeri 3 株; Saccharomyces cerevisiae 23 株; S. exiguus 2 株; Torulaspora delbrueckii 3 株與 Zygosaccaromyces rouxii 2 株。 |
英文摘要 | Detection, isolation and identification of osmotolerant spoilage yeasts occurring in spoiled kumquat storage brine, candied fruit products and salt-brined vegetable products were conducted. 66 yeast strains were isolated and identified as 11 species belonging to seven geners. The major species were candida rogosa (3 strains), C. sake (2 strains), C. tropicalis (16 strains), Cryptococcus laurentii (1 strain), Kluyveromyces marxianus (1 strain), Pichia membranaefaciens (10 strains), P. ohmeri (3 strains), Saccharomyces cerevisiae (23 strains), S. exiguus (2 strains), Torulaspors delbrueckii (3 strains) and zygosaccharomyces rouxii (2 strains). |
