| 中文摘要 | 本研究係以乳粉中之一般成分性狀(General compositions and constituents)、特殊性狀(Special characteristics)、以及衛生安全性(Hygienic properties)等三大試驗項目為基礎,進行對臺灣地區市售36種廠牌之全脂乳粉、嬰兒調製乳粉、調味乳粉、以及脫脂乳粉等之分析試驗,其結果: 蛋白質與乳糖為乳粉中重要成分,惟獨中國國家標準中並無明確之規定,故無法知曉供測乳粉之乳糖與蛋白質含量是否合乎國家法規。 就總固形物含量言,全脂乳粉與嬰兒調製乳粉均符合國家標準,但約有61.11%乳樣不符合廠商保證規格,?與包裝標識不符且有若干進口廠牌之嬰兒調製乳粉則有添加過量非乳固形物之現象。 溶解性(Solubility index)與凝乳張力(Curd tension)為鑑定乳粉品質優劣之重要指標,對嬰兒調製乳粉尤為重要,前者之平均值為1.36 ml,溶解度不佳;後者為2.31 gm,係屬優良軟性凝乳張力。 就衛生安全性而論,全部供試乳粉中均未曾發現污染抗生素、碳酸鈉、水楊酸,或過氧化氫等藥物或化學藥品;一般總菌數亦符合國家標準,惟有不少數目之乳粉污染大腸菌?,幸而平均含量每公克僅有0.48個而已。 |
| 英文摘要 | This research were according to the following three principal basic testing items of their (1) general compositions and constituents; (2) specific characteristics; and (3) hygienic properties, to studies on the total 36 brands of whole milk powder, infant milk powder, flavor milk powder, as well as nonfat dry milk, respectively. This will be considerable interest as references in improving the qualities and imported trade control of milk powder. The results were summarized as follows: Both of the protein and lactose were the important constituents in milk powder, for the defect of any specifications of these two ingredients in Chinese Nation Standard that it can not compared the actual situation of the results to the CNS. As to the total solids of milk powder, all of the 36 brands of sample were meet the national specifications, but some of the imported infant milk powder were added variable amount of non-milk solids (may be sucrose) into the testing samples. Antibiotics, Sodium Carbonate, Salicylic Acid, as well as Hydrogen Peroxide of drugs or chemicals can not be detected from the samples. The solubility index and curd tension of milk powder were the important index to the qualities of infant milk powder, the former got unfavorable results but the latter resulted in good soft curd tension. About the total counts of bacteria, all of the samples were meet the specification of Chinese Nation Standard, but many of milk powder were contaminated with few amount of coliform groups of organisms. |
