| 英文摘要 | Canistel (Pouteria campechiana), also known as eggfruit, is a tropical fruit from the Sapotaceae family. Its pulp is rich in polyphenols, flavonoids, B vitamins, and vitamin C. Due to its high sweetness, it has potential as a natural sweetener. Agricultural processing products can help extend their storage shelf life and increase additional value. The purpose of this research is to develop canistel pulp as a functional food ingredient and evaluate the antioxidant components and capacity. The pulp was dried using hot air at 50°C, ground into powder, and analyzed for total polyphenols, flavonoids, vitamin C content, total reducing power, and Diphenyl-1-picrylhydrazyl (DPPH) scavenging activity. The results showed that using 70% ethanol as the extraction solvent, the total polyphenols, flavonoids, vitamin C content and antioxidant capacity were better than water extraction. The results of this study can be used as a reference for the development of fruit and vegetable products, using fruits and vegetables with antioxidant functions to increase the added value of agricultural products. |
