中文摘要 | 冷凍乾燥之蘿蔔嬰以己烷、乙酸乙酯及甲醇依序萃取可溶成分,其萃取率分別為11.35、4.01及25.78%。比較蘿蔔嬰已烷萃取物(hexane extract of radish sprout, HERS)、乙酸乙酯萃取物(ethyl acetate extract of radish sprouts, EERS)及甲醇萃取物(methanolic extract of radish sprouts, MERS)之抗氧化性質,並以丁基羥基甲氧苯(butylated hydroxyanisole, BHA)與α-生育醇做為參考指標,發現於還原力、Fe2+螫合能力及DPPH自由基清除能力方面,EERS有最佳的表現,其次為MERS,再其次為HERS。於水中油乳液自氧化系統中之抗氧化能力,發現EERS>BHA>MERS = α-生育醇>HERS;於Fe2+及Fenton reaction催化系統之抗氧化能力,發現EERS不及BHA。在油相自氧化系統,EERS、MERS及HERS三者皆不具抗氧化能力。 |
英文摘要 | The yields of extracts of freeze dried radish (Raphanus sativus L.) sprouts extracted stepwisely using hexane, ethyl acetate and methanol were 11.35, 4.01 and 25.78%, respectively. The antioxidative activity of hexane extract of radish sprouts (HERS), ethyl acetate extract of radish sprouts (EERS) and methanolic extract of radish sprouts (MERS) were evaluated and compared with that of butylated hydroxyanisole (BHA) and α-tocopherol. Among the three kinds of extracts, EERS shoed the strongest reducing power and chelating ability of Fe2+, and the best scavenging activity on the DPPH free radical. MERS was next, followed by HERS. Results indicated that the antioxidative activity of these antioxidants and solvent extracts of radish sprouts were in the order EERS>BHA>MERS = α-tocopherol >HERS in an oil-in-water emulsion autoxidation syste. However, BHA had better antioxidative activity than did EERS in peroxidation systems induced by Fe2+ and Fenton reaction. However, EERS, MERS and HERS had no antioxidative activity as measured using the weighting method in a lipid system. |
