中文摘要 | 缺乏葉酸為羊乳之重要營養缺陷,而葉酸又是人體生長發育所必須,尤其對嬰 兒與孕婦而言,葉酸更形重要。本研究之目的期在羊乳中添加入外源性葉酸,除補足其重 要之營養缺陷外,並藉以探討葉酸強化保久羊乳貯存期間葉酸降解情況以及添加葉酸後保 久羊乳理化性狀的變化。 本試驗採用的原料為生羊乳,分別添加0、1、2、4、8 ug/ml的葉酸,充填入隔光或 不隔光的玻璃瓶中並經60℃的預熱,再於滅菌釜中進行121℃,15分鐘的滅菌,然後於四 個月的保存期間內,每個月檢測一次保久羊乳的物化性狀。檢測的項目包括:pH值、褐色 度、黏度、沈澱量、滴定酸度,脂質、蛋白質、乳糖之含量等以及保存期間葉酸的降解情 況,並探討光線對葉酸的影響。 結果顯示,添加不同量葉酸於加工條件較嚴苛之保久羊乳中並不會對羊乳的物化性質 造成額外不良影響。而在葉酸的降解方面,在第一週的檢測試驗中顯示隔光或不隔光的處 理對於葉酸的降解並無影響,但是經過一個月的貯存試驗後,隔光處理組葉酸的平均損失 量僅有約5.5%,但是在不隔光處理組的平均損失量則約達16%,而在四個月的保存之後 ,隔光處理組葉酸的平均損失量約8,2%,而不隔光處理組之損失量則達20%以上。 |
英文摘要 | Folic acid is an essential nutrient f or human growth, especially f or inf ants and pregnant women. As the lack of folic acid is a great disadvantage for goat milk, with this study aimed to manufacture a long life goat milk by fortifying with extra folic acid, and also to determine the degradation of folic acid and the quality changes in goat milk during storage. Raw goat milk was adjusted so that its folic acid contents were to 0, 1, 2, 4 and 8 ug/ml, then pre-heated to 6OoC and packaged in commercial or light isolation glass bottles. After sterilization at 121 oC for 15 minutes, the degradation of folic acid and the quality changes of long life goat milk including pH, browning degree, viscosity, titrable acidity, fat, protein and lactose content were determined at first week and each month until 4 months storage. The results showed that there was no harmful effect on the milk quality when folic acid was added in long life goat milk. As to the degradation of folic acid, there was no significant differences between commercial and light isolation package at the first week. But in the first month, there were 16% and 5.5% of degradation for commercial and light isolation package, respectively. After 4 months storage, there were 20% and 8.2% of degradation for commercial and light isolation package respectively. |
