| 中文摘要 | 雜交一代早生種‘高峰’甘藍性狀和初秋相似,但在耐熱和抗病表現上優於‘初秋’甘藍。近年來市占率有上升的趨勢,但對於貯藏特性和櫥架品質並無深入的研究。本研究利用0.03 mm聚乙烯袋包裝抽氣封口形成氣變包裝後,於1℃貯藏8及10週評估對‘高峰’甘藍貯藏期間及櫥架5天後品質的影響。經氣變包裝貯藏8及10週其失重率低於0.2%,而對照組不包裝則高達約15-19%。模擬超市櫥架環境,於10℃櫥架5天後平均只需去除1.2-2.4片外葉,相較對照組需去除7片外葉才達可售狀態。氣變包裝可有效改善葉片黃化、切口褐化、及生理障礙,經1℃貯藏8及10週後移至10℃櫥架5天後可售率仍有80%以上。氣變包裝具有極大潛力提高‘高峰’甘藍貯藏及櫥架品質。 |
| 英文摘要 | The 'Gao-fong' cabbage has similar traits to 'K-Y cross' cabbages but shows better heat tolerance and disease resistance than 'K-Y cross' cabbages. It becomes more and more popular recently in Taiwan but the traits of storage and on shelf quality are still unknown. In order to evaluate the quality of stored and on shelf 'Gao-fong' cabbages treated with modified atmosphere packaging (MAP), cabbages were packed with 0.03 mm polyethylene bags and vacuumed by a packing machine. After 8- or 10-week storage, the weight loss of MAP cabbages was less than 0.2%, which was far lower than the control group (15-19%). After 5-day display at 10℃, the traits between control group and MAP were compared. On the average, the trimmed leaf number was 1.2-2.4 in MAP cabbages but it was around 7 in the control group. Moreover, the result showed that the yellowing index, stem browning index and trimmed leaf number in MAP cabbages were significantly lower than the control group. The MAP treatment significantly improved the physiological disorders and increased the marketable ratio more than 80%. To sum up, MAP showed high potential to improve the quality of stored and on shelf 'Gao-fong' cabbages. |
