| 中文摘要 | 青花菜的生長階段易受環境和氣候之影響,導致採收時蕾球大小不一需多次採收,為了搭配機械性採收以降低人力成本消耗,故一次性大量採收農產品並長期貯藏相當重要。本研究目的為探討採收不同大小的青花菜於低溫1°C長期貯藏蕾球之變化。結果顯示不同大小加工用‘綠寶’青花菜於低溫1°C貯藏8週後其外觀無顯著差異,花蕾外觀皆為深綠色,仍具有商品價值,且總葉綠素含量與採收當日相比無顯著下降。此外小、中和大球隨貯藏時間蕾球全可溶性糖(TSS)、澱粉、以及可溶性蛋白(SP)含量逐漸下降,然而總游離氨基酸(FAA)含量則緩慢上升,貯藏至第8週時三者幾乎無顯著差異。不同大小的青花菜貯藏至第8週時抗壞血酸含量和清除DPPH自由基的能力無顯著差異。因此可搭配機械一次性採收不同大小‘綠寶’青花菜以減少採收次數並降低人力成本,並長期貯藏減緩加工場的排程壓力。 |
| 英文摘要 | The development of broccoli is easily affected by the environment and climate, so the broccoli heads need to be harvested several times. In order to cooperate with mechanical harvesting, it is vital to harvest the amount of agricultural products at once and store several weeks due to limited laboratory resources. This study was to investigate the changes of various broccoli head after long-term storage at 1°C. The results showed that the appearance of different size of 'Green Baby' broccoli had no significant difference at 1°C for 8 weeks, and the broccoli head was still dark green and had commercial value, and the total chlorophyll content not significantly decrease compared with the harvesting day. Moreover, the contents of total soluble sugar (TSS), starch, and soluble protein (SP) decreased with time in small, medium, and large size of broccoli. However, free amino acids (FAA) increased slowly, and the content in different size of broccoli were similar after 8-th week storage. After 8-week storage, there were no significant differences in ascorbic acid and DPPH-scavenging activity among different sizes of broccoli. Therefore, different sized of 'Green Baby' broccoli can be mechanically harvested at once to reduce labor cost, and long-term storage can extend support of processing plants. |
