中文摘要 | 本研究自民國八十一年七月至八十三年六月間,分別調查以EPA及DHA為主之 二十種膠囊式魚油及以小麥胚芽油為主之二十種維生素E產品,分析產品之純度、 膽固醇含量及鮮度等。調查結果顯示市售膠囊式魚油之EPA及DHA含量隨魚種不同 而有相當大的變異,以EPA及DHA之總量計,鮭魚油在7.0-57.8%之間,進口魚肝油為 28.4%,省產魚肝油及鰻油最低,僅在0-9.6%之間;而大部分產品所標識之EPA及 DHA含量與實驗值出大頗大,且普遍有偏高之現象,偏高率達53-328%。鮮度測試顯 示各式魚油產品之過氧化價也有偏高之問題,偏高率(>20 meq/kg)達25%。膠囊式魚油 之膽固醇範圍在<50ppm-0.84%之間。市售維生素E基質中所含的天然油脂含量極 微,且生育醇之型態僅含α型,顯示產品型態以合成形式販售為多,不符合標識所謂 「純天然小麥胚芽油」;而產品之油溶性基質的過氧化價亦有偏高現象,超過10 meq/kg 之產品達35%。產品之純度調查結果顯示,95%之產品均僅含α型生育醇,且各產 品的純度變異相當大,在0.5-73.0%之間,而產品之實驗值與標識值相符合者,僅占 10%,其餘90%的產品之標識值比實驗值高出6-77%之多。 |
英文摘要 | Twenty brands of commercial capsulated fish oil products which riched in EPA and DHA, and twenty brands of commercial vitamin E products were inspected, respectively during July, 1992 to June, 1994. Quality survey included freshness and purity test and cholesterol analysis. Results of this survey showed that there were notable variation in EPA and DHA contents among the investigated samples. The sum of EPA and DHA contents of salmon oil ranged from 7.0 to 57.8%, while that of imported fish-liver oil was 28.4%. the locally produced fish-liver oil and eel oil contained the lowest sum of EPA and DHA, 0-9.6%. The EPA and DHA contents labeled on products were found to be higher than those measured in the experiments. The differences of EPA and DHA contents between the labeled and the measured ranged from 53 to 328%. In freshness tests, the peroxide value (POV) of the investigated samples exceeded the safe allowance value (20 meq/kg) by up to 25%. Cholesterol contents of tested samples ranged from <50ppm to 0.84%. Most of the vitamin E products declared made of natural wheat germ oil. However, the results showed that the labeled contents were not consistent with the measured data. The natural oil content of the tested samples was very limited, indicating that most of the vitamin E products were synthetic. More than 35% of the tested samples had a POV of higher than 10 meq/kg. Purity test revealed that 95% of the tested samples contained only α -form tocopherol which varied from 0.5-73.0%. There were only 10% of the tested commercial products whose labeled contents were consistent with the measured values, whereas for the rest (90%) of tested samples, the labeled contents exceeded the measured values by up to 6 to 77%. |
