中文摘要 | 鐵的主要功能是運送及利用氧氣或為�t的輔助因子;鐵亦是自由基主要催生者。 一般認為,鐵質對長時間耐力運動尤其重要。運動者服用鐵劑是為平衡運動造成之耗損。違 規輸血、擅服鐵劑,目的在提高最大耗氧量與延續運動時間,但輸血過程可能的污染傷害, 及過量致使血液黏稠性增加,流速變慢,易生心血管方面的疾病,潛在危險性不可不知。 維生素 C 主要作用在合成膠原,除建構組織參與體內多項生理反應外; 也是種抗氧化劑, 可將維生素 E 還原再利用。目前已知維生素 C 對肌力和心肺耐力均無增強效果。但可改善 人體對熱的耐受性、降低流汗率以減少運動時熱病的發生;健康上並有防癌的功能。運動員 服維生素 C 的最大目的,即在對抗運動產生的氧化性傷害。 服用過量可能造成胃疾、腹瀉 及電解質失衡等。 維生素 C 正常狀態時雖然有助鐵質吸收,惟若不察體內存有過量的鐵時,維生素 C 將引發 鐵蛋白釋放活化鐵,即將傷害較少的 Fe �橧棜鴞邑阨`較大的 Fe �插A導致更多的氧化性傷 害。雖然大多數的研究者均認為缺鐵並不致影響運動表現,因為正常狀況下,體內鐵質的調 節極為嚴謹,但長期匱乏或特殊狀下亦會損及健康。 本文從營養生化學的觀點,說明運動員增補服用維生素 C 與鐵劑, 及兩者之交互作用,可 能對健康或運動表現造成的傷害。 維生素 C 與鐵是一把雙刃劍,運動員在使用前,應對服 用劑量、時機、身體狀況進行瞭解,以便在健康維護與促進運動表現間獲得平衡。 |
英文摘要 | Iron is an important component of hemoglobin, myoglobin, and a number of enzymes. As such, the availability of iron is important for the oxygen binding and transport chain and for energy production. Iron deficiency anemia reduces oxygen transport capacity and may thus affect endurance in physical training. It may also produce a long term nutritional imbalance. To guard against this, athletes commonly take iron supplements. They also take vitamin C supplements to enhance inorganic iron absorption. However, in certain situations iron and vitamin C supplements can be harmful. The problem lies in the fact that a high serum level of vitamin C can cause the normally harmless Fe ��,which exists inside the ferritin protein, to drive through the pores of the protein shell. In the process, it converts to catalytic Fe2 ��,which when it leaks into the blood generates millions of dangerous free radical. Following these findings, we suggest that athletes should have their iron status assessed before using iron and vitamin C supplements. |
