英文摘要 | Kinetic model analysis of the lactic acid production by Lactobacillus helviticus from lactose has confirmed the invalidity of Leudeking's model. This innovative model is proved to be valid for both pH- controlled and pH-uncontrolled lactic acid fermentations; i.e., the lactic acid production rate is uniquely growth-associated, while the non-growth mechanism is insignificant. This article also shows that non-competitive inhibition is caused by the total concentration of all the lactate species rather than by the undissociated form. |
