中文摘要 | 本研究之目的,旨在探討血管灌注氯化鈣,對雞骨骼肌肌原纖維蛋白質裂解之影 響。淘汰蛋雞自頸部放血約十分鐘後,自頸動脈注入 0.1M 及 0.3M 氯化鈣。肌原纖維的電 泳樣品, 製備自經 5 ℃貯藏 0, 1, 3 及 7 日之注射組及對照組(未注射)雞隻的大胸肌 ( Pectoralis major )。 電泳結果顯示,0.3 M 注射組之 Titin 的裂解較 0.1M 注射者 稍快。 注射組之 Nebulin 及 troponin-I 的消失與 30 kDa 成分的出現,均較對照組為快 。故,血管灌注氯化鈣可加速雞骨骼肌於死後貯藏時,肌原纖維蛋白質之裂解。 |
英文摘要 | Effect of calcium chloride (CaCl��) infusion on post mortem chicken pectoralis major muscle was studied. Myofibrils for SDS-PAGE were prepared from 0, 1, 3 and 7 days 0.1 M and 0.3 M CaCl �� -infused muscles samples and non-infused samples at 5 ℃. Results of SDS-PAGE analysis showed that titin degraded slightly faster in 0.3 M than in 0.1 M CaCl �� -infused muscles samples. Disappearance of nebulin and troponin-I and appearance of 30 and 32 kDa bands were more rapidly in 0.1 M or 0.3 M CaCl �� -infused samples than in non-infused samples. In conclusion, CaCl �� infusion can accelerate degradation of myofibrillar proteins in chicken skeletal muscle during post mortem storage. |
