中文摘要 | β-環狀糊精 (β-CD)對食品中存在之膽固醇具有極高之選擇性,同時亦具無毒性 、可食性、安定性佳等優點。 因此,本研究擬以β -CD 做為移除豬油中膽固醇之基質,探 討利用的可能性,以及β -CD 處理過後之豬油其品質的變化。 豬油 (5g) 以有機溶劑溶解 後通入充填有β -CD(5g) 之管柱,進行豬油中膽固醇之移除, 此過程稱為一個處理批次。 由試驗之結果顯示,管柱所能處理之豬油批次會隨便用之溶劑的不同而改變,以二氯甲烷、 乙酸乙酯及丙酮為溶劑時,所能處理之豬油批次分別為 19、18 及 10 個批次;而以二氯甲 烷為較適當之溶劑, 因其同時具有最高之豬油回收率 (82%) 和膽固醇移除率 (65 ∼ 86%) 。由其安定性試驗之結果顯示,有機溶劑的使用並不會影響處理後豬油成品之氧化安定性。 以乙酸乙酯為豬油之溶媒,可發現管柱所能處理之樣品批次會隨著溫度之上升而增加;而其 於常溫下管柱之再生使用效果則顯示, 管柱可至少再生使用 5 次以上,但再生後可處理之 豬油批次及最終所獲得豬油成品之膽固醇移除率�D有隨再生次數增加而降低的趨勢。另外, 以管柱式連續處理時, 當膽固醇移除率約達 83% 之後,移除的效果便不再隨管柱數目的增 加而提高。 |
英文摘要 | β-Cyclodextrin (β-CD) not only has extremely high selectivity for cholesterol existing in foodstuffs, but also has many advantages, such as non-toxicity, edibility, and stability. The purposes of this study were to investigate the effects of various operating conditions on the removal of cholesterol in lard using the β -CD column process; to investigate the possibilityof regeneration of β -CD column; and to determine the quality changes in lard after treatment with β -CD. In the column process, lard (5g) was dissolved in an organic solvent and passed through a β -CD column (5 g) to remove cholesterol; this procedure was called one operation. The number of operations of the lard sample was dependent on the solvent used; and the number of operations for dichloromethane, ethyl acetate and acetone was 19, 18 and 10, respectively. Dichloromethane was an optimal solvent for dissolving lard since it showed the highest recovery of lard (82%) and the highest efficiency of cholesterol removal compared with the other solvents. The results also indicated that the oxidative stability of lard was not changed by treatment with different solvents in the column process. The number of operations of the lard sample increased with increasing temperature in the column process when ethyl acetate was used as the dissolving solvent. The β -CD column could be regenerated more than 5 times; however, the number of operations of the lard sample and the efficiency of cholestrol removal in lard decreased with an increasing number of regenerations. In addition, the maximal efficiency of cholesterol removal in the column process was about 83%; it was not influenced by the increase in the number of columns used. |
