| 中文摘要 | 本研究以二種�狾怴e臺農67號(TN67);臺中189號(TC189)〕及一種糯米〔 臺中秈糯一號( TCSW1 )〕做為米食餐捲〔 rice rolls ( RR )〕之原料, 其他成分尚 包括花生、薏仁、火腿、香菇、胡蘿蔔及調味料。實驗結果顯示,�狾怴�糯米之最適混合比 例為 70 ╱ 30 ( W/W )。樣品分為兩組,一組為 TN67 ╱ TCSW1 (簡稱 TN 組),另一 組為 TC189 ╱ TCSW1 (簡稱 TC 組)。兩組餐捲之計算蛋白質效率比( c-PER ),TN 組 為 2.37 ∼ 3.70,TC 組為 2.77 ∼ 4.44; 每份( 315 克)米食餐捲可提供熱量 570 ∼ 582 kcal, 蛋白質 16.35 ∼ 18.30 克,足可供應 RDNA ( Recommended Daily Nutrient Allowances )建議每日所需之 1/3 量之熱量及營養素。 |
| 英文摘要 | Two varieties of japonica rice, Tainung 67 (TN67), Taichung 189 (TC189) , and one glutinous rice variety, Taichung San Waxy Rice NO.1 (TCSW1), were used as raw materials of rice rolls (RR) in this study. Other ingredients also included peanut, job's tears, ham, shiitake, carrot and spices. Different proportions of japonica/waxy rice were tested. Experimental results revealed that the optimal ratio of japonica/waxy rice was 70/30 (w/w). Samples were divided into two groups in which RR made of TN67/TCSW1 (coded as TN) and made of TC189/TCSW1 (coded as TC). The calculated protein efficiency ratio (c-PER) ranged from 2.37-3.70 for TN group and from 2.77-4.44 for TC group. Each serving (315 gm) of RR provided 570-582 kcal and 16.35-18.30 gm proteins, which is enough to supply 1/3 energy and nutrients in daily requirements specified in Recommended Daily Nutrient Allowances (RDNA). |
