| 英文摘要 | Four major acylated anthocyanin pigments of white skin sweet potato roots (Ipomoea batatas) were isolated and purified by HPLC and conventional paper chromatographic methods. Aglycones and acyl moieties of these pigments were identified to be cyanidin, and caffeic and ferulic acid by cellulose TLC and HPLC. The sugar moieties were identified to be glucose by GLC. Molecular weights of their deacylated anthocyanins were measured by FAB-mass. C-3 sugars were identified to be sophorose by HPLC and β-glucosidase digestion. By chromatographic method, UV-visible spectrometry and chemical analysis, these pigments were tentatively characterized as caffeoyl cyanidin 3-sophoroside 5-glucoside, dicaffeoyl cyanidin 3-sophoroside 5-glucoside, diferuloyl cyaniding 3-sophoroside 5-glucoside and caffeoyl cyanidin 3-sophoroside 5-glucoside. |
