英文摘要 | For major anthocyanins were isolated and purified from tuber of red skin sweet potatoes by ODS column and BioGel P-2. The constituting moieties of each anthocyanin were identified from its acid hydrolysate. Their absorption spectrum and paper chromatographic properties were also measured. FAB-mass was used to measure their molecular weight and fragementation properties. 1H-NMR was used to resolve their chemical structures. From the results of all these measurements, the chemical structures of these four anthocyanins were tentatively identified as phydroxybenzoyl, caffeoyl cyaniding 3-sophoroside 5-glucoside, dicaffeoyl cyaniding 3-sophoroside 5-glucoside, caffeoyl cyaniding 3-sophoroside 5-glucoside and feruloyl cyaniding 3-sophoroside 5-glucoside, respectively. |
