英文摘要 | Anthocyanins are water-soluble and among the most important groups of plant pigment. Because of safe for human consumption, they are a highly desirable substitute for synthetic red colorants which have been banned by regulatory action. The study is conducted to identify the anthocyanins in mulberry fruit. Anthocyanin was extracted by homogenizing the fruit with 0.1% HCI-MeOH. Two anthocyanins were isolated by paper chromatography and further purified by HPLC. FAB-mass was used to measure their molecular weight. Paper chromatography and GLC were used to identifying their compositional moieties. Partial hydrolysis analysis, UV-Vis absorption, fluorescence under UV and lH-NMR were used to resolve their chemical structure. These two anthocyanins were concluded to be cyanidin 3-rutinoside and cyanidin 3-glucoside respectively. |
