| 中文摘要 | 調查臺北市及基隆市8處零售市場及10家超級市場的冷凍草蝦仁32件及冷藏雞腿55件之微生物學品質。雞腿有83.6%的試樣之好氣性總生菌數(APC)高於1.0×106 CFU/g,而草蝦仁只有2件(9.5%)受此菌屬污染;受L. monocytogenes污染的雞腿有2件,草蝦仁只有1件。以充臭氧(0.9~2.3mg-O3/1)的蒸餾水、3%食鹽水或0.005%牛血清蛋白溶液試驗抑制L. monocytogenes的情形,發現在2分鐘內(4~5℃)可有效的抑制該菌。將接種L. monocytogenes的雞腿在充有臭氧(約1.5 mg-O3/1)的食鹽水中處理6分鐘,在雞腿上的L. monocytogenes菌數只減少0.5對數值左右。 |
| 英文摘要 | Thirty-two samples of frozen grass prawn meat and 55 samples of refrigerated chicken leg were collected from 8 retail markets and 10 supermarkets in Taipei and Keelung. Microbilogical quality of these samples were examined. The aerobic plate counts (APC) of 83.6% of chicken leg samples and of 28.1% of shrimp meat samples were higher than 1.0×106 CFU/g; 58.2% of chicken leg samples and 37.5% shrimp meat samples were spoiled by feacal coliforms. Twenty out of 22 (90.9%) chicken leg samples were contaminated with Listeria spp., while only 2 out of 21(9.5%) shrimp meat samples tested were contaminated with bacteria of this genus. L. moncocytogenes was isolate from 2 chicken leg samples, 1 shrimp meat sample. As treated in ozaonated (0.9~2.3 mg-O3/1) distilled water, 3% saline, or 0.005% bovine albumin solution, at 4~5℃, L. monocytogenes was inactivated within 2 min. When L. monocytogenes-seeded legs were treated in ozonated saline (about 1.5 mg-O3/1) for 6 min, the count of L. monocytogenes on the legs reduced only 0.5 logarithmic value. |
