中文摘要 | 本研究探討三株從冷凍蝦仁分離的單核細胞增生李斯特菌(標號17、39及82)及一株該菌種的參考菌(ATCC 19111)之DNA G+C百分率、β-溶血素的分子量及經臭氣處理的反應。四株菌的G+C百分率可分為兩類:第39號菌為38%,第17及82號與參考菌為49-50%。β-溶血素的分子量亦可分為兩類;第17及39號菌為55 kDa,第82號菌及參考菌為43 kDa。四株菌在最終臭氧濃度為1.6mg/l之蒸餾水(4℃)中,經2分鐘全部死滅。四株菌的G+C百分率、溶血素分子量、與對臭氧的敏感性均無相關性。接種於蝦仁上的參考菌在最終臭氧濃度為1.6mg/l的蒸餾水(4℃)中浸泡6分鐘的死滅情形與浸泡於未經臭氧處理的蒸餾水的結果相比並無結果差異(P>0.05)。 |
英文摘要 | Three strains of Listeria monocytogenes (coded 17, 39, and 82) isolated from frozen shrimp meat and strain ATCC 19111 were studied on their G+C DNA contents, molecular weights ofβ-hemolysins, and response to ozonation. The G+D contents of the four strains could be divided into two categories: strain 39 was 38.1%; strains 17, 82 and ATCC 19111 were 49-50%. Molecular weights ofβ-hemolysins from the four strains could be grouped into two varieties: strains 17 and 39 were 55 kDa; strains 82 and ATCC 19111 were 43 kDa. All of the four strains of L. monocytogenes were completely destroyed wthin 2 min in ozonated distilled water (4℃) when the final concentration of ozone was 1.6 mg/l. No relationship was found among the G+C content, the molecular weight, and the ozone sensitivity of the four strains. Destruction of strain ATCC 19111 inoculated in shrimp meat was not significant (0.43 log cycle, p > 0.05), when the meat soaked in ozonated distilled water (4℃; final ozone concentration, 1.6 mg/l) for 6 min was compared with that soaked in distilled water for the same time. |
