| 中文摘要 | 本研究以台南縣東山鄉、嘉義縣竹崎鄉與南投縣中寮鄉等共九個果園所 採收之柳橙為試驗材料,進行物理化學與官能品評分析,藉由統計分析探討不同 產地所生產之柳橙的適當採收條件,以提供柳橙在"品質掛帥"的現今市場上,品 質標準建立之參考。結果顯示:1.柳橙果皮之a,b,a/b值、與果汁之可溶性固形物、 酸度、糖酸比與整個果品安消費者的喜好程度呈顯著相關,2.以東山鄉、竹崎鄉 與中寮鄉所生產的柳橙受本試驗之消費者型品評員的喜好程度已達 "有點喜歡" 之程度為其採收之適當期,其果頂及果蒂周圍部分之a/b值至少須分別達到 0.454、0.380及0.520;可溶性固形物至少須分別達到11.3、11.4及11.6;而糖酸比至少 須分別達到27.4、26.5及22.5。 |
| 英文摘要 | Using Liucheng orange produced at Dungshan Shiang in Tainan, Chuchi Shiang in Chayiand Jungliaur Shiang in Nantou as the experimental meterials, their physicochemical andsensory attributes were analyzed to investigate the quality changes during harvesting periods.Their optimum harvesting conditions are expected to be a reference for establishing qualitystandards of Liucheng orange to compete the imported produces in the local market. Theresults are summarized as follows: 1. The a, b, a/b values on the top and stem end of Liucheng orange and the °Brix, acid, °Brix/acid values of juice had significant correlations (p<0.05) with the degree of liking for theoranges by the consumer test. 2. Using the degree of liking reaching to the "like slightly" level as the minimumstandard for harvesting, the a/b values on the top and stem end of Liucheng orange had to atleast reach to 0.454, 0.380 and 0.520; the °Brix values had to at least reach to 11.3, 11.4 and11.6; the °Brix/acid values had to at least reach to 27.4, 26.5 and 22.5 for Liucheng orangeproduced at Dungshan, Chuchi and Jungliaur Shiang, respectively. |
