中文摘要 | 本試驗以臺中縣新社新位於面向東南方之山坡地的果園,且以酸桔為砧木之21年生果樹之不同結果部位所生產的椪柑及南投縣中寮鄉立於面向西南方之山坡地的果園,且以酸桔為砧木之10年生果樹之不同結果部位所生產的柳橙為試驗材料,探討其在樹上的結果部位與品質的關係。結果顯示,著生在樹冠外圍之北方的椪柑與西方的柳橙之果皮a(指椪柑)及a/b(指椪柑)值與果肉的可溶性固形物、糖酸比及糖類含殘,與消費者型品評員對其果肉之甜味、酸味、風味及整體喜好性等,均顯著低於著生在樹冠外圍之其它方位者,而椪柑果肉之酸度及檸檬酸含量則反之。著生在樹冠外圍的椪柑與柳橙之果皮色澤,和果肉之可溶性固形物、糖酸比、庶糖及維生素C含量,與消費者型品評員對其果皮之色澤及果肉之甜味、酸味、風味及整體喜好性等,均顯著高於著生在樹冠內圍者,而果肉之酸度及檸檬酸含量則反之。著生在果樹較高位置的椪柑與柳橙果皮之色澤和果肉之維生素C含量均高於結果位則反之。著生在果樹較高位置的椪柑與柳橙果皮之色澤和果肉之維 生素C含量均高於木位置在中間高度及較低者,其它品質無顯著差異。 |
英文摘要 | The physicochemical and sensory attributes of the Ponkan mandarin and Liucheng orange picked from trees located on a southeastern hill at Hsingshen in Taichung and on a southwestern hill at Jungliaur in Nantou, respectively, were analyzed to investigate the effects of different positions of trees on qualities of the fruits. The results are summarized as follows: the a and a/b values of epicarp color (for Ponkan mandarin), the content of °Brix, °Brix/acidity and sugars of endocarp, and sensory qualities of sweetness, sourness, flavor and overall prference for Ponkan mandarin and Liucheng orange form the outside part on the northern and western sides of the trees, respectively, were significantly lowere than those on the other sides of the trees while the level of acidity and citric acid of endocarp for Ponkan mandarin were the opposite. The L, a, b and a/b values of epicarp color, the content of °Brix, °Brix/acidity, sucrose and ascorbic acid of endocarp, and sensory qualities of epicarp color, sweetness, sourness, flavor and overall preference for Ponkan mandarin and Liucheng orange from the outside part of the tress were significantly higher than those of the inside part of the trees while the acidity and citric acid content of endocarp were the opposite. Only the color of epicarp and the ascorbic acid content of endocarp for Ponkan mandarin and Liuchenge orange form the outside part of the trees were significantly higher than those of the inside part of the trees while the acidity and citric acid content of endocarp were the oppoosite. Only the color of epicarp and the ascorbic acid content of endocarp for Ponkan mandarin and Liuchenge orange from the higher level of the trees were higher than those of the middle and the lower level of the trees, the other quality attributes showed no significant difference among the tree levels. |
