中文摘要 | 本研究以南投縣中寮鄉之不同樹齡所產不同周徑的柳橙為試驗材料, 探討其物理化學與官能品質在不同採收期的變化與差異。結果顯示: 1. 柳橙果實之大小主要影響採收期間柳橙之酸度、檸檬酸含量、糖酸比及消費者 型品評員對柳橙果實之大小、酸味、風味與整體感的喜好程度等。 2. 樹齡主要影響採收期間柳橙之可溶性固形物、果糖、葡萄糖、酸度、檸檬酸、 蘋果酸、糖酸比及果皮之a與a/b值及官能的甜味、酸味、風味、細緻感與整 體喜好性等。 |
英文摘要 | Using different sizes of Liucheng orange from different ages of trees produced at JungliaurShiang in Nantou as the experimental materials, their physicochemical and sensory attributeswere analyzed to investigate the quality changes and differences during harvesting periods. Theresults are summarized as follows: 1. Sizes of Liucheng orange affact acidity, citric acid, °Brix/acid and sensory qualities ofsizes, sourness, flavor and overall preference during harvesting periods. 2. Ages of trees affect a, a/b values of the rind, °Brix, fructose, glucose, acidity, citric acid,malic acid, °Brix/acid of the juice and sensory qualities of sweetness, sourness, flavor,smoothness and overall preference of Liucheng orange during harvesting periods. |
