中文摘要 | 本試驗目的在探討運輸、繫留方式及吊掛、電昏、放血處理條件對白肉 雞血液中焦性兒茶酚胺含量的影響及其與屠體品質的關係。測定項目包括採取血 液樣品以高性能液相層析法(HPLC)配置電化學檢知器(Electrochemical Detecto]r,BCD)測定血漿中焦性兒茶酚胺(catecholamines)含量,並測定屠體溫度、 pH值、胸肉瘀血及出血點、翅膀瘀血及出血點、骨折、死亡率等。. 試驗結果顯示:在運銷屠宰過程中,最後有經過電昏處理者,其血漿中正腎上腺 素、腎上腺素含量比僅經運輸或再經繫留者顯著的高(P<0.05);而度巴素含量則無 顯著差異(P>0.05)。各場間不同運輸、繫留方式對血漿中焦性兒茶酚胺合量無顯 著影響(P>0.05),且與靜值亦無顯著差異(P>0.05),但猝然驅逐緊迫,則顯著(P<0.05) 高於各場及靜值。電宰各場間之不同吊掛、電昏、放血處理條件對血漿中正腎上 腺素、腎上腺素含量有顯著影響(<0.05),且顯著(P<0.05)高於靜值及傳統市場者; 但猝然驅逐緊迫除了顯著(P<0.05)低於N場W外,與其它電宰各場無顯著差異 (P>0.05):而使巴素含量則電宰各場間無顯著差異(P>0.05),且與靜值及傳統市場者 亦無顯著差異(P>0.05),但猝然驅逐緊迫,則顯著(P<0.05)高於大部份各場及靜 值。正常運輸、繫留方式及吊掛、電昏、放血處理條件對電宰各場胸肉pH2值、 腿骨折、翅頭、翅尖及肩關節部之瘀血及出血點、死亡率無顯著影響(P>0.05):而 翅頭與肩關節部之瘀血及出血點,傳統市場有顯著高於電宰場之趨勢;翅尖瘀血 及出血點電宰各場間無顯著差異(P>0.05),但皆顯著(P<0.05)高於靜值及傳統市場 者;對各處理屠體溫度、胸肉、翅膀(翅中、翅尾)、肘關節部、腕關節部瘀血及出 血點、翅膀骨折有顯著影響(P<0.05);血漿中正腎上腺素含量與胸肉出血點 (r=0.836)、翅尾瘀血及出血點(r=0.832)間呈顯著正相關;血漿中腎上腺素含量與胸 肉出血點(r=0.846)、翅尾瘀血及出血點(r=0.815)間亦呈顯著正相關;血漿中正腎上 腺素、腎上腺素含量與翅尖瘀血及出血點(r=0.568,0.569)間雖呈正相關,,但相 關不顯著。血漿中正腎上腺素、腎上腺素含量最高及次高者,其胸肉出血點、翅 尾瘀血及出血點顯著高於靜值與其他含量者(P<0.05)。 |
英文摘要 | The aim of the experiment was to investigate the effect of transporting,resting and hanging, stunning, bleeding methods on the levels of plasma catecholamine in slaughtered broiler and it's relation to carcass quality. Blood samples for catecholamines assay were taken from rested broilers inpen, after driving, after some different treatment. By means of HPLC-ECDmethodology, plasma catecholamines were determined. Slaughtered broiler carcass temperature, pH value, occurences of breast haemorrhage, wing haemorrhage, fracture and mortality percentage were also measured. The results were as follows: Abruptly driving stress, hanging, stunning and bleeding methods had a significant effect on the levels of plasma norepinephrine and epinephrine inslaughtered broiler (p< 0.05). Treatments had a significant effect on carcass temperature, pHI value, occurences of breast, wing (middle and tail), elbow, wrist haemorrhage, and wingfracture (pectoral girdles). The incidence of the following conditions was not affected by treatments:thigh fracture, wing head haemorrhage, red wing tips, shoulder haemorrhageand mortality. There was significantly positive correlation between plasma norepinephrine,epinephrine and breast, wing tail haemorrhage. |
