中文摘要 | 將新鮮黃豆油以210±5℃的溫度油炸油條,在連續油炸3小時(A組),6小時(B組)及9 小時(C組)時分別採取各該殘油,以相向的比例(8%)添加到其他成分相同之基本飼料中,與未經油炸處理的等量新鮮黃豆抽(D組)所調配的對照飼料相比較作老鼠(Long-Evans 品系)之對飼育(Pair-feeding)實驗,以觀察經不向時間處理的炸油對幼鼠體重的增加及肝臟細胞之發育有無影響。經10週及14週之飼養結果顯示: 1.第10週時,各組老鼠之生長率並無明顯之差異;直至第14週時,C組老鼠有較為緩慢之生長現象。 2.四組老鼠之全血比重(G(下標 B))血漿比重(G(下標 P))血漿蛋白(Plasma protein)及血球比容(Hematocrit value)等之變化在第10週及第14週時均無有意義的差異。 3.內臟器官,除C組老鼠之Liver/100g體重較其他組為高升,餘之器官如Kidney, Brain, Spleen及Heart等在各組之間則無明顯的差異現象,但第14週時,C組雌鼠之腎臟重量較其他為重。 4.老鼠肝臟中之總DNA及RNA含量在第10週及第14週時均隨油炸時間的增長而降低。 5.實驗組老鼠肝臟中之Protein/DNA及RNA/DNA比值均隨油炸處理時間的增長而上升。 |
英文摘要 | The effect of residual soybean oil after deep-pan frying Yu-tiao (Chinese twisted cruller) food on the growth rate and the cellular development of hepatocytes in rats were studied. Weanling rats of Long-Evans strain were divided into 4 groups and pair-fed with 4 test diets. The test diets consisted of the same composition with the addition of 8% residual soybean oil after different treatment. In diet A, B, C, the oil source previously used for deep-pan frying the Yu-tiao under 210±5℃ for 3, 6, 9 hours respectively. While the fresh oil were add to diet D as a control. During the period of feeding experiment, body weight were recorded weekly. At the end of the experiment, the blood samples were withdrawed by heart puncture from rats anesthesized under ether, and various organs were removed and weighed. The hemoglobin, plasma protein and hematocrit of the blood samples were a nalysed. And following the .method of phillip's. And the DNA, RNA and protein content of the livers were quantitated for the evaiuatlon of cellular development. The results revealed that: 1) The difference in growth rate of the 4 groups of rats is not significant at 10th week,but growth depression was observed in group C (which were fed with the diet containg 9 hour deep-pan frying oil) at 14 weeks of age. 2) No significant difference was observed in the parameters of blood test. 3) The difference of the organ weight, including heart, spleen and brain was not obvious among the tested groups. But the liver weight of group C was found to the larger in some extent than those of the other groups also the kindney weight of group C rats were heavier than those of the others at 14th week. 4) The DNA and RNA content of the livers were found to be inversely related to the length of the soybean oil using for deep-pan frying. 5) The protein/DNA and RNA/DNA ratio increased proportionally with the length of time of the soybean oil using for deep-pan frying. |
