中文摘要 | 金盞花萃取物( marigold flower extract, MFE)含豐富之葉黃素( lutein)可當作蛋黃色素的來源,更能富集於雞蛋提供消費者營養補充,但其添加 MFE 劑量與富集葉黃素濃度尚缺乏資料,而作為本研究之探討目的。研究選用 384 隻 60 週齡海蘭褐殼蛋雞,逢機分配至 4 個處理組,分別為添加 0、1、 2 及 3 g/kg MFE(商品),以使飼料分別含有 0、36、72、108 mg/kg 葉黃素。每處理組 4 欄,每欄 24 隻,平飼飼養於設有巢箱之稻穀地面,以每週為 1 期,連續 4 期分析蛋雞的產蛋性能;每欄在試驗開始 12 天內隔日,及在 14 天後每 7 天逢機選取 2 顆蛋分析蛋品質及以色差儀分析蛋黃顏色,並額外分析第 28天之蛋黃葉黃素濃度。研究結果顯示,飼料添加 1 或 2 g/kg MFE 與對照組有相似之產蛋性能,但添加 3 g/kg MFE 極顯著降低產蛋率、蛋生成量及飼料換蛋率(P < 0.01)。飼料添加 1 或 2 g/kg MFE 可較對照組顯著提高蛋白高度、蛋黃高度及霍氏單位(P < 0.05),但添加至 3 g/kg MFE 則與對照組相似。隨飼料添加 MFE 濃度逐漸加深蛋黃紅色、黃色及色度( hue),其中以羅氏扇評分作為蛋黃評估方法較為簡單,但以色度系統最為敏感。試驗 28天時之飼料 MFE添加量分別與蛋黃之葉黃素濃度、羅氏扇評分、紅色值( a*)、色度及彩度( chroma)呈正相關( P < 0.01),但與蛋黃亮度值( L*)呈現高度負相關( P < 0.01),而添加 3 g/kg MFE可以顯著提升蛋黃葉黃素濃度至 4.11 mg/100 g,其值約為對照組之 29 倍。綜合上述結果,在熱季期間飼料添加 1 或 2 g/kg MFE 雖未影響產蛋性能但可提高雞蛋品質,而添加 3 g/kg MFE雖可增加蛋黃顏色和葉黃素濃度,但不利於產蛋性能。 |
英文摘要 | Marigold flower extract is abundant in lutein and it has been reported that it could enrich pigments and lutein content in yolk once supplemented to laying hens. But the dosage response of yolk retention of lutein has not yet been revealed. A total of 384 60-week-old laying hens were randomly allocated into 4 diet treatments for 28 days: basal diet supplemented with 0 (control), 1, 2, and 3 g/kg MFE containing 36 mg/g lutein, i.e., lutein level was 0, 36, 72, and 108 mg/kg, respectively. Each treatment consisted of 4 pens and within each, 24 hens were floor fed and set nests. Production performance was measured weekly, and 2 eggs per pen were randomly collected every 2 days for analyzing egg quality and yolk color during 0 - 12 post treatment; during treatment day of 14 - 28, eggs were collected weekly. Yolk lutein concentration of laying hens was only analyzed in samples of day 28. Results showed that both 1 and 2 g/kg MFE supplementation increased the egg white height, yolk height, and Haugh unit (P < 0.01), however, 3 g/kg MFE treatment affected little on parameters measured as they were similar to that of control group, no improvement in egg production, egg mass, or feed: egg (g/g). The redness, yellowness, and hue of yolk were enhanced following the diet adding of MFE. Moreover, the Roche color fan scale and hue were realized as the simple and sensitivity method in yolk color measurement, respectively. The dietary MFE content was positively correlated with yolk lutein concentration, Roche color fan scale, redness (a*), hue, and chroma of laying hens on day 28, however, there were negatively correlation with yolk lightness (L*) (P < 0.01). Diet supplemented with 3 g/kg MFE increased the yolk lutein concentration to 4.11 mg/100 g, 29 fold higher than the control. In conclusion, diet added with 1 - 2 g/kg MFE evidently could improve egg quality during the hot environment, but not on the production performance. However, although 3 g/kg MFE supplementation could enhance the yolk color and lutein concentration, it reduced the production performance of hens. |
