| 中文摘要 | 本研究以兩種濃度檸檬酸液(0.1和0.2 M)及滾打時間(15或30分鐘)處理,以探討對鵝砂囊品質特性之影響。結果顯示,檸檬酸濃度在0.1 M或0.2M,延長滾打時間並不影響砂囊pH值,在較短滾打時間(15分鐘),提高檸檬酸濃度可明顯使pH值下降。砂囊總酸度則明顯受滾打時間及檸檬酸濃度增加而上升。增加滾打時間或檸檬酸濃度皆可提高吸水率,如時間與濃度同時增加,又較單一因子增加者更高。不論檸檬酸濃度為0.1 M或0.2 M,滾打時間自15分鐘延長至30分鐘,對明亮度值(L值)並無明顯影響,但經0.2 M檸檬酸浸漬者,其L值皆較以0.1 M浸漬者高,紅色度值(a值)則相反,0.2 M檸檬酸浸漬者,較以0.1 M浸漬者低,黃色度值(b值)則不受檸檬酸濃度與滾打時間之影響。肌原纖維斷裂指數,受酸濃度及滾打時間的增加而提高,而提高酸濃度之增加效果較滾打時間增加更高。 |
| 英文摘要 | Different concentrations of citric acid (0.1 or 0.2 M) and tumbling times (15 or 30 min) were used in this study to evaluate the effects on the qualities of goose gizzard. The results indicated a longer tumbling time would not reduce pH values, regardless of whether 0.1 or 0.2 M citric acid was used, but higher citric concentration could clearly reduce pH in a shorter tumbling time (15 min). Total acidity increased as the concentration of acid or tumbling time increased, as did the water-absorption rate. The water-absorption rate would further increase due to a combination of the time and concentration effects. High L values and lower a values were observed in the 0.2 M citric acid group, but showed no difference between the two tumbling groups, while the b values were unaffected by the acid concentration or tumbling time. The myofibril fragmentation index increased with increasing citric acid concentration or tumbling time. |
