中文摘要 | 以乳酸菌發酵生產功能性胜肽,不但可以攝取益生菌和各種營養素,更可以有促進健康的功效。本研究篩選發酵大豆後抑制血管收縮素轉換晦能力最佳的乳酸菌株,並分析以大豆為基質之生長、產酸、大豆蛋白分解、血管收縮素轉換酶抑制、與自由基清除能力。結果顯示在測試的71株菌中,以LYC424發酵大豆產生的血管收縮素轉換酶抑制能力最強。分析以LYC424發酵大豆72小時菌數為7.80 logCFU/ml '酸鹼值為pH4.69,滴定酸度為2.37。隨時間增加蛋白質水解率增加,而血管收縮素轉換酶抑制能力也增加。在發酵72小時後,水溶性蛋白水解率為98.64%血管收縮素轉換晦抑制能力為58.26% 。發酵的過程中,發酵液之抗氧化能力也持續增加。在發酵72小時後,發酵液之自由基清除能力提高30.38 %。本研究發現LYC424可以在大豆中生長,分解大豆蛋白產生血管收縮素轉換酶抑制活性,並提高自由基清除能力,值得進一步進行試驗並開發成保健食品。 |
英文摘要 | Functional peptides through lactic acid fermentation are benefic to human, not probiotics and various nutrients but also promote health. In this study, we analyzed a total of 71 lactic acid bacteria from the laboratory culture collections. Lactic acid bacteria were selected for their ability to inhibit angiotensin I-converting enzyme activity during soybean fermentation. The strain LYC424 was selected for its good inhibition of angiotensin I-converting enzyme activity. The concentration of soluble proteins and peptides, free radical scavenging activity and general physical and chemical properties were further analyzed for the strain LYC424. After 72-hour fennentation, the bacterial number was 7.80 10gCFU/ml with pH 4.69 and titratable acidity was 2.37. The degree of protein hydrolysis and angiotensin I-converting enzyme inhibition activity were increased with fermentation time. After 72-hour fermentation, the degree of protein hydrolysis was 98.64% and the inhibitory activity on angiotensin I-converting enzyme was 62.84%. The free radical scavenging activity increased 30.38% after 72-hour fermentation. In conclusion, LYC424 has a strong protein hydrolysis activity, and can not only effectively release the angiotensin I-converting enzyme inhibitory peptides but also increase free radical scavenging activity. |
