英文摘要 | Soy protein hydrolysate with specific functional properties was produced by hydrolysis of soy protein isolate with Alcalase and Flavourzyme in a continuous membrane system equipped with a hollow fiber ultrafiltration membrane. A concentration of 2.5% hydrolysate produced by this system was almost completely soluble over a pH range of 2~9. The moisture absorption capacity was 1.8~3 times that of intact soy protein isolate over a water activity range of 0.6~0.95. The antioxidant activity of the hydrolysate at a 2.5% addition level was close to that of BHT at a 0.1% addition level in soybean oil. As compared to intact soy protein isolate, the antigenicity (log2) of the hydrolysate decreased from 7 to <1. A long-term operation study elucidated that the membrane reactor system could maintain steady production for over 16 hr of soy protein hydrolysate with specific functional properties. |
