中文摘要 | 本試驗乃檢測由業者提供共70件深層油炸油樣品之品質分析,包括酸價、總極性物質含量、聚合物含量 及微量金屬含量分析。分析結果為超過酸價2之樣品共有57件,總極性物質含量在20%以上者共有23件,其中 超出國際建議丟棄標準之24%,則僅有四件,而聚合物含量在10%以上者共有五件。70件樣品中酸價與總極性 物質含量之相關性為R2 = 0.3344;在不同酸價範圍中,僅有酸價高於4時,其與總極性物質含量始有較佳的相 關性 (R2 = 0.8541)。此顯示酸價小於4時,其值的高低與總極性物質含量之多寡並無必然之相關性,但若高於4 時,總極性物質含量有隨著酸價的增加而提昇。總極性物質含量與聚合物含量相關性不佳,但聚合物含量超 出10%以上時,其總極性物質含量亦在20%以上,然而高總極性物質含量>20%時,其聚合物含量卻不一定高 於10%,亦即總極性物質含量之測定較聚合物含量之測定為評估油炸油品質的較佳方式。在快速檢測方面, 酸價之試紙檢測結果與實驗室滴定法並無良好之相關性 (R2 = 0.0853)。 |
英文摘要 | Seventy deep-frying oil samples were collected to analyze their acid values (AV), the contents of total polar compounds (TPC), polymers and trace metals. Among these samples, fifty seven samples showed AV exceeded 2; twenty three samples contained more than 20% TPC, four of which were beyond 24% TPC, the discarded level recommended by most countries; five oil samples gave polymer content more than 10%. The correlation between AV and TPC among 70 samples is low (R2 = 0.3344). Higher correlation with TPC was shown (R2 = 0.8541) only when AV > 4, while no correlation with TPC when AV < 4. Higher correlation with TPC (R2 = 0.8541) was shown when AV > 4, while no correlation with TPC when AV < 4. The correlation between TPC and the polymer content was low, but TPC was always avobe 20% when the polymer content was above 10%. However, not all the sampes contained more than 10% polymers when TPC was more than 20%. These data indicated that TPC is a better indicatoy to evaluate the quality of the deep-frying oie. The repid test showed low correlation between the AV test strips method and the titration method (R2 = 0.0853). |
