中文摘要 | 隨著臺灣地區快速的經濟發展和工業化,農村人口逐漸移向都市而使得農村人口 老化及婦女化。雖然農村婦女在農業經營上的角色日益重要,有關臺灣地區農村婦女其飲食 習慣、生活型態以及營養知識和狀態的研究則甚少。 本研究共調查了 928 位從事水稻、花 卉、水果或蔬菜栽培工作之已婚農村婦女。由調查結果得知有 36 %的農村婦女不知何謂食 物之五大類或均衡飲食,顯示臺灣地區婦女的營養教育仍有待加強。 在飲食習慣方面, 有 1/4 的農村婦女三餐沒有定時及定量。雖然多數婦女平均每月只參加不超過一次的宴席,但 有 6 %的婦女則平均每月參加四次以上。 膳食攝取方面,農村婦女在主食類和蔬果類的攝 取上尚稱適當,但絕大多數婦女之牛乳攝取則遠低於標準。此種結果說明農村婦女的鈣質攝 取量仍然不足,增加了罹患骨質疏鬆症的可能性。 |
英文摘要 | The rapid economic growth and industrialization of Taiwan have led to populatin migration from rural to urban areas and to aging and feminization of farm workers. Although the role of woman in agriculture has become increasingly important, little is known regarding the eating habit, life style and nutritional knowledge and status of married farm women in Taiwan. The present survey consisted of 928 farm women who have been engaged in cultivating rice crops, flowering plants, fruits or vegetables. The results show that 36% surveyed subjects were not aware of or familiar with the five food groups or balanced diet concept, suggesting a need for improved nutritional education. A quarter of the surveyed population did not eat meals at regular times or in adequate amounts. Although most surveyed women (63%) averaged no more than one feast attendance per month, 6% of the women attended four or more feasts. The farm women generally had adequate intakes of staple food (rice and noodle), vegetables and fruits, but had low consumption of cow milk. The results suggest that the farm women have insufficient intake of calcium which may increase the risk for development of osteoporosis. |
