中文摘要 | 本研究旨在探討血液透析患者之飲食習慣。研究工具係以自擬之結構式問卷,以個別訪視的方式收集資料。其問卷內容包括體位測量、飲食習慣及食物攝取頻率等三部份。由結果得知患者之年齡層偏高,在含磷較高之食物中以奶類、蛋黃、干貝及麥粉攝取較多;含鈉較高的食物中以味精、奶油、沙拉醬及蕃茄醬攝取較多;含鉀較高的食物中以筍類、紅蘿蔔、豆芽、空心菜及其他蔬菜類與九層塔等調味料類攝取較多。因此,血液透析患者就食物的選擇方式來看,須加強營養教育。 |
英文摘要 | The study investigated the dietary habits relevant to hemodialysis patients. 20 hemodialysis patients from Kung-Tein General Hospital Hemodialysis Center were studied. All subjects were interviewed by a constructed questionnaire, which was tested for reliability and validity. The study included a survey to investigate basic information, eating habits, and frequency of eating. The results of this study were as follow: By means of the food frequency questionnaire, the hemodialysis patients intook more than milks, yolks, Oat flour, and Scallop in high phosphate foods. The hemodialysis more intook than MSG, butter, salad, and tomato sauce in high sodium foods, and more intook than Bamboo shoot, carotene, Mug bean sprouts Water convolvulus and others vegetables in high potassium foods. These data suggest that information relevant to hemodialysis patients is best provided by food selestion, and addition nutritional education. |
