| 中文摘要 | 本報告主要探討阿斯巴甜(aspartame)及醋磺內酯鉀(acesulfame-K)的使用情唬、理化性質、安定性及安全性。阿斯巴甜為雙胜□(dipeptide)人工甜味劑,舙度約為蔗糖的200倍,甜味曘似蔗糖;每克產生1卡;不影響血糖恆定;但安定性不佳,易受熱分解而降低甜味;故極適用於冷飲或不需加熱者。至於醋內酯鉀,其嬌度與阿斯巴甜相同;如與阿斯巴甜併用,更有相乘效果;人體無法代謝;其安全性佳,耐高溫,且不易與其它成分作用;然用量大時,會帶有克味及金屬後味。故如能將兩者併用,即可截長補短,發揮最大效益。至於每日允許量,前者每公斤體重為50mg,後者則為15mg。 |
| 英文摘要 | The consumptions, physicochemical properties, stabilities and safeties of aspartame and acesulfame-K are reviewed. Aspartame is a dispeptide artificial sweetener. It has a caloric value of 1 kcal/g, and can maintain homeostatic in blood sugar. Its sweetness is approximately 200 times of surcrose. But it is heat-labile, and the sweetness intensity drops off with the breakdown. Therefore, it is good to use in cold beverages and foods without further heating. The sweetness of acesulfame-K is heat-resistant and inert with other ingredients, and can’t be metabolized. However, bitter and metallic flavor may be tasted in high concentration. Therefore, it should be beneficial to combine both of them. The acceptable daily intake value (ADI) is 50mg/Kg body weight for aspartame and 15mg/Kg body weight for acesulfame-K. |
