中文摘要 | 本實驗係以快速黏度分析儀及布氏黏度測定儀分別測定17種澱粉之連續黏度變化曲線,並探討糊化特性指標間之相關性,快速儀之測定條件為29分鐘。由結果發現兩者之黏度曲線頗為相似,指標間之相關性良好(p 0.01)。當僅有少量的樣品,而又需在短時間內完成測試時,應可使用快速儀測定之。 |
英文摘要 | The pasting profiles of starches using a Brabender viscoamylograph and Rapid Visco-Analyzer (RVA) were determined and compared. Their characteristic indices were also evaluated. A RVA 29 min test was designed for the experiment. The viscosity curves for the starches in both instruments were similar, and the correlation coefficient for these indices was fine (p<0.01). This suggested that RVA may be an alternative instrument for measuring the pasting curve when only a small given sample and less time are available. |
