中文摘要 | 台茶12號和青心大冇經遮蔭處理,顯示遮蔭處理會使芽葉的長度縮短、節間變短、節間直徑變小、葉片變薄,其中以遮蔭80%處理最為明顯。經遮蔭處理的芽葉鮮重及乾重明顯降低,特別是乾重,會隨遮蔭度的提高而明顯降低。茶樹遮蔭處理會提高葉綠素含量,其中夏茶遮蔭50及80%處理分吸較對照組提高27和93%,顯示葉綠素含量會隨遮蔭度的提高而明顯的增加,且遮苤處理會增加芽葉組纖維含量。茶樹經遮苤處理後可溶性物、多元酚類、兒茶素類、可溶性糖均呈下降的趨勢,而總游離胺基酸含量則隨遮蔭度的提高而增加。在礦物元素方面,芽葉經遮蔭處理,均有增加之趨勢,尤其是遮蔭80%處理最為明顯。遮蔭處理對綠粉茶品質之影響,最明顯的是色澤較綠且苦澀味降低,尤其以遮蔭80%處理最為顯著。 |
英文摘要 | Under shading treatment, most of agronomic characters of tea plant were changed obviously, included shorter length of bud and internode, decreased diamenter of internode and smaller leaf thickness for both the TTES NO.12 and Chin-Shin Dapung. In addition, both fresh weight and dry weight of the young soots were decreased as tea plants were subjected to the shading treatment. The growth inhibition became more seriously as shading degree inc-eased. In contrast, leaf chlorophyll content was increased by 27 and 93% of control under 50 and 80% shading treatment, respectively, in summer crop season. In respect of leaf crude fiber content, the content was in-respectively, in summer crop season. In respect of leaf crude fiber content, the content was increased due to that growth of young shoots was inhibited by shading treatment, Some chemical component contents of the young shoots, soluble solid, polyphenols, catechins, and soluble sugars were also declined, but total free amino acids and mineral elements were increased. In addition, the quality of green powdered tea produced from tea plants treated by shading was better than that of unshaded treatment, which have lower astringent taste, as the higher chlorophyll content, especially under the 80% shading treatment. |
